Chocolate Coconut Energy Balls
These one pan chocolate coconut energy balls are so easy to make. They are perfect for a snack or to satisfy a sweet tooth.

- 20 Medjool dates large, pitted
- 1/3 cup cocoa powder
- ¼ tsp salt
- ½ tsp vanilla extract
- 1 cup old fashion oats
- 1 cup shredded coconut
- 1-2 tbsp water
- shredded coconut for decorations optional
Mix everything together in food processor. If consistency of mixture too dry add 1-2 tablespoon of water to moisten. Mixed ingredients will form a sticky dough.
Use a tablespoon to spoon the mixture into balls. Roll the mixture into balls using hands. Optional- Roll each ball into shredded coconut for decoration.
Put balls in airtight container and place in refrigerator (or can be eaten immediately after done).
