Chocolate Coconut Energy Balls

These one pan chocolate coconut energy balls are so easy to make. They are perfect for a snack or to satisfy a sweet tooth. 

I don’t know many people who don’t love chocolate and with the coconut combination, it’s definitely delicious. This simple recipe is not only great for a snack or post workout bite, but it’s also a quick clean up.

How this recipe came about: I have a best friend who needed a dessert that didn’t have any added sugars, but was naturally sweet. She wanted the combination of coconut and chocolate. And that’s how this recipe was created.

What makes this good: 

  • It’s naturally sweetened and guilt-free. 
  • Peanut free, vegan

For those who may not know I am allergic to several nuts including peanuts. Therefore, using sunflower butter was the perfect alternative to peanut butter for me. Another thing great about this recipe is that if you aren’t allergic to peanuts you can always swap the sunflower butter with peanut butter. 

Once all ingredients are mixed in the food processor, you will notice the mixture may appear dry. If it feels too dry (depending on your medjool dates) you can add a teaspoon of water at a time. I find that once I start mixing it by hand, it easily form balls without the extra addition of water. 

How to Store:

Place these energy balls in an airtight container and keep refrigerated. I actually prefer the taste after it’s been refrigerator. 

Chocolate Coconut Energy Balls

Ingredients
  

  • 20 Medjool dates large, pitted
  • 1/3 cup cocoa powder
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 1 cup old fashion oats
  • 1 cup shredded coconut
  • 1-2 tbsp water
  • shredded coconut for decorations optional

Instructions
 

  • Mix everything together in food processor. If consistency of mixture too dry add 1-2 tablespoon of water to moisten. Mixed ingredients will form a sticky dough.
  • Use a tablespoon to spoon the mixture into balls. Roll the mixture into balls using hands. Optional- Roll each ball into shredded coconut for decoration.
  • Put balls in airtight container and place in refrigerator (or can be eaten immediately after done).
