Smashed Potatoes

These smashed potatoes are crunchy and golden brown. They are great served as an appetizer or a side dish.

Ingredients
  

  • 1.5 lbs small to medium red or yellow potatoes
  • 3 tbsp olive oil
  • ¼ tsp garlic
  • salt to taste about ½ tsp – 1 tsp
  • ground black pepper
  • 2 tbsp chopped fresh parsley or green onions

Instructions
 

  • Preheat oven to 425 F.
  • Wash potatoes.
  • Put water and a pinch of salt in a pot and bring to a boil.
  • Add potatoes to the pot and cook for about 20 minutes or until potatoes are tender and easily pierced through by a fork.
  • When potatoes are done, drain them.
  • Spray baking pan with cooking oil.
  • Evenly distribute the potatoes on a single layer over the baking pan and use a potato masher (or fork) gently flattening each potato.
  • Drizzle olive oil over smashed potatoes. Sprinkle garlic powder, salt, and black pepper on the potatoes.
  • Baked the potatoes until golden brown about 20-25 minutes. Broil potatoes for 2 minutes to get the potatoes golden and crispy. Sprinkle fresh herbs on potatoes and serve hot.
