Smashed Potatoes
These smashed potatoes are crunchy and golden brown. They are great served as an appetizer or a side dish.

- 1.5 lbs small to medium red or yellow potatoes
- 3 tbsp olive oil
- ¼ tsp garlic
- salt to taste about ½ tsp – 1 tsp
- ground black pepper
- 2 tbsp chopped fresh parsley or green onions
Preheat oven to 425 F.
Wash potatoes.
Put water and a pinch of salt in a pot and bring to a boil.
Add potatoes to the pot and cook for about 20 minutes or until potatoes are tender and easily pierced through by a fork.
When potatoes are done, drain them.
Spray baking pan with cooking oil.
Evenly distribute the potatoes on a single layer over the baking pan and use a potato masher (or fork) gently flattening each potato.
Drizzle olive oil over smashed potatoes. Sprinkle garlic powder, salt, and black pepper on the potatoes.
Baked the potatoes until golden brown about 20-25 minutes. Broil potatoes for 2 minutes to get the potatoes golden and crispy. Sprinkle fresh herbs on potatoes and serve hot.
