Kimchi Fried Rice

Easy kimchi fried rice recipe topped with a fried egg. It’s simply delicious.

Ingredients
  

  • cooking oil
  • 3 minced garlic cloves
  • 1 cup chopped kimchi
  • ¼ cup kimchi juice (or add water if you don’t have enough kimchi juice)
  • 2 tbsp gochujang (Korean chili paste)
  • 3 tsp sesame oil
  • 2 tbsp water
  • 3 cups cooked brown rice (1-day old rice- may also use white rice)
  • salt to taste
  • egg optional
  • 1 tsp sesame seeds
  • 1 tsp furikake or seaweed
  • 1 sliced green onion garnish

Instructions
 

  • In a nonstick pan or cast-iron skillet add oil over medium heat and add minced garlic. Cook garlic for about 10 seconds. Add kimchi and kimchi juice. Add gochujang, sesame oil, and water. Stir until it starts to simmer for about 2 minutes.
  • Add broken up rice into pan and mix well.
  • Taste and adjust with salt.
  • Optional fried egg- Place oil in a small nonstick pan over medium high heat. When oil is hot add egg. Cook egg to your liking.
  • Serve egg on top of fried rice topped with furikake, sesame seeds, and green onions. Serve dish hot an enjoy.
