Healthy Oatmeal Cookie
Soft and chewy oatmeal cookies that are made with oats, maple syrup, coconut oil, and raisins.

- ¼ cup maple syrup or honey
- ¼ cup coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup whole oats
- ½ cup of all purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- ¼ cup raisins
Preheat oven to 350 F. Line a baking sheet with parchment paper on baking pan.
In a large bowl, mix maple syrup, coconut oil, egg, and vanilla.
In a separate bowl, mix all dry ingredients. Add dry ingredients to wet mixture.
Mix well.
Scoop about 2 tbsp of cookie dough on prepared baking sheet. Making sure to leave space between each cookie.
Bake for 10 minutes and allow to cool for 5 minutes. Enjoy!
