Vegetable Lo Mein

Super delicious vegetable lo mein noodle recipe with a savory Asian sauce. Way better than takeout!

Lo mein is probably one of the most popular dishes found at Chinese restaurants. I love my homemade lo mein version because often I find takeout lo mein to be saturated with oil. Cooking at home allows you to add what you like or omit what you don’t like!

Ingredients You Will Need

Noodles: Lo mein noodles are thick, yellow, and slightly chewy. Often you can find lo mein at your local Asian Grocery store in the fridge section. Prepare the noodles as indicated on the packaging. Be sure not to overcook your noodles or noodles will become soggy and fall apart.

Vegetables: I used bell peppers, onions, and snow peas in this recipe, however, you can use any vegetables you have in your fridge. Other vegetables you could consider are mushroom, cabbage, bok choy, or broccoli.

Sauce: The ingredients you will need for this sauce is oyster sauce, soy sauce, and dark soy sauce. This sauce is savory and slightly sweet.

Now let’s get started:

First cook the noodles as described on noodles packet instructions. After noodles are done rinse in cold water and toss in sesame oil and set aside.

In a small bowl, add oyster sauce, soy sauce, and dark soy sauce. Mix well and set aside.

Cut and prep all vegetables. Set aside.

In a large pan or wok add cooking oil. On medium heat add onions, carrots, and bell peppers. When onions and bell peppers begin to soften add snow peas and green onions. Stir for 1-2 minutes.

Add noodles to vegetables. Pour the sauce mixture over noodles and vegetables. Toss well and serve hot.

  • 16 oz lo mein noodles
  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tbsp oil
  • ½ carrot peeled and julienned
  • 1 bell pepper cut into length wise strips
  • 1 small onion chopped
  • 1 cup snow peas
  • 2 green onions cut into about 2-inch pieces
