Pork Stir Fry Noodles

Pork stir fry noodles are one of my favorite things to make because it is so fast and easy to make. It is the perfect combination of noodles, bok choy, and ground pork.

This dish is great because you can throw in any of your favorite vegetables and protein you would like to use. It’s also versatile because you can use any noodles you have on hand.

For this recipe, I used ground pork, but you can use ground turkey, ground chicken, or even seafood.

This recipe is great as leftovers and reheats well. Make sure to store noodles in an airtight container and store them in the fridge.

What type of noodles to use?

My choice of noodles were HAIO fresh knife cut noodles (see photo below) because of the chewy texture. I found this at my local Asian grocery store called H-Mart. This recipe works well with any types of noodles as long as you follow the cooking instructions on the package. Be sure to avoid over cooking your noodles. 

What type of vegetables to use?

I like to use bok choy with this recipe. I wash my bok choy and cut the ends off which allow the bok choy to become individual pieces. I wash them one more time and set them aside. You can also cut the bok choy in half or in quarters. 

Other vegetables you can use:

  • Broccoli
  • Carrots
  • Cabbage
  • Spinach
  • Mushrooms

Really any vegetables you like! 

You start this recipe by mixing all sauce ingredients in a bowl. See full recipe for ingredients below.

Then began boiling your noodles in water. Drain your noodles and rinse with cold water. Toss noodles with sesame oil.

Then began to brown your ground pork in a pan or wok.

The ground pork will start to slightly brown when cooking. This is a good indicator to add your vegetables.

Stir fry vegetables for about 1 minute until it begins to slightly wilt. Then add 1 tbsp of sauce mixture to your ground pork and vegetables. 

After noodles are done cooking, be sure to rinse them in cold water and toss in sesame oil. The sesame oil prevents the noodles from sticking to each other. Now toss those noodles in with the vegetables and ground pork. Add remaining sauce and toss well. Stir fry for another 3-4 minutes.

Serve noodles hot and enjoy!

Ingredients
  

  • 2 bundles of your favorite noodle (I used HAIO Korean fresh knife-cut noodles)
  • 1 tbsp sesame oil
  • 3 bok choy (see above for cutting)
  • 2 green scallions cut into ¼-1/2 inch long
  • ½ lb ground pork

Sauce

  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp shaoxing cooking wine
  • 1 tsp rice wine vinegar

Instructions
 

  • Mix all ingredients of sauce in a small bowl and set aside.
  • Remove noodles from the package and add them to a pot of boiling water. Cook noodles as instructed on the package. Avoid overcooking noodles as they will become too soft and fall apart. Rinse noodles and drain under cold water then toss in sesame oil. The sesame oil prevents the noodles from sticking together.
  • Heat a frying pan or wok over high heat. Add ground pork (optional may add cooking oil- I opt out of cooking oil since pork normally produces oil as it cooks). Cook ground pork until it starts to slightly brown then add bok choy and scallions. Stir fry for about 1 minute.
  • Add 1 tbsp of sauce mixture to ground pork and vegetables. Stir well.
  • Add noodles to meat and vegetables. Add the remaining sauce. Toss well. Continue to stir fry for about 3-4 minutes.
  • Serve noodles hot.
