Kimchi Fried Rice

Easy kimchi fried rice recipe topped with a fried egg. It’s simply delicious. 

Kimchi is fermented napa cabbage that is very savory and can have a pungent smell but taste amazing.

When I make my kimchi fried rice, I use store bought kimchi from Hmart (local Asian grocery store). If you have a recipe you love then you can absolutely make homemade kimchi for this dish. To make this dish vegan you can opt for vegan kimchi. Even though kimchi is filled with napa cabbage it often contains seafood preservatives and flavors.

One thing that is great about kimchi fried rice is that you can add any extra vegetables and protein if you like. This dish also pairs great with spam.

The Best Rice for Kimchi Fried Rice

Leftover steamed rice is the best rice to use for fried rice. Using leftover rice ensures that the fried rice is not too mushy. Freshly cooked rice has too much moisture and is not ideal for fried rice. I like to use brown rice for this recipe, but using white rice is usually more common and delicious.

How to Make Kimchi Fried Rice

  1. In a nonstick pan or cast-iron skillet add oil over medium heat and add minced garlic. Cook garlic for about 10 seconds. Add kimchi and kimchi juice. Add gochujang, sesame oil, and water. Stir until it starts to simmer for about 2 minutes.
  2. Add broken up rice into pan and mix well.
  3. Taste and adjust with salt.
  4. Optional fried egg- Place oil in a small nonstick pan over medium high heat. When oil is hot add egg. Cook egg to your liking.
  5. Serve egg on top of fried rice topped with furikake, sesame seeds, and green onions. Serve dish hot an enjoy.

Ingredients
  

  • cooking oil
  • 3 minced garlic cloves
  • 1 cup chopped kimchi
  • ¼ cup kimchi juice (or add water if you don’t have enough kimchi juice)
  • 2 tbsp gochujang (Korean chili paste)
  • 3 tsp sesame oil
  • 2 tbsp water
  • 3 cups cooked brown rice (1-day old rice- may also use white rice)
  • salt to taste
  • egg optional
  • 1 tsp sesame seeds
  • 1 tsp furikake or seaweed
  • 1 sliced green onion garnish
