Healthy Oatmeal Cookie
Soft and chewy oatmeal cookies that are made with oats, maple syrup, coconut oil, and raisins.
One thing I love about adding oats into my desserts is that it also makes a great snack for after the gym or for breakfast.
This recipe is simple and versatile. You can add chocolate chips, nuts, or whatever you desire as a cookie filler.
How to Store?
Store in an airtight container on the counter or in a pantry for 4-5 days. Cookies are freezable.

Ingredients
- ¼ cup maple syrup or honey
- ¼ cup coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup whole oats
- ½ cup of all purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- ¼ cup raisins
Instructions
- Preheat oven to 350 F. Line a baking sheet with parchment paper on baking pan.
- In a large bowl, mix maple syrup, coconut oil, egg, and vanilla.
- In a separate bowl, mix all dry ingredients. Add dry ingredients to wet mixture.
- Mix well.
- Scoop about 2 tbsp of cookie dough on prepared baking sheet. Making sure to leave space between each cookie.
- Bake for 10 minutes and allow to cool for 5 minutes. Enjoy!
