Grilled Lemongrass Pork Patty

The perfect grilled combination of lemongrass and pork combined in a patty.

This recipe is great because you can prepare it ahead of time to allow the meat to marinate. It is also pairs great with rice and noodles or even eaten as a snack solo!

How to Cut Lemongrass

  • Cut off the end stalk about 1 cm crosswise and discard
  • Remove the 1st and 2nd outer layers of the lemongrass and discard. This part is usually dry and unpalatable.
  • On the other end of the stalk of lemongrass cut off the leafy end and discard
  • Now the lemongrass bulb (the hard part) of the lemongrass remains
  • Slice the lemongrass crosswire and cut as thin as possible
  • Finely chopped the lemongrass. Optional: Using a mortar and pestle to slightly pound lemongrass to make pieces smaller and more tender.

How to Make Grilled Lemongrass Pork Patties:

In a large bowl, add ground pork, thin soy sauce, oyster sauce, sugar, black pepper, lemongrass, garlic and Thai red peppers (optional). 

Mix well.

Begin to form small pork patties using about 2-3 tbsp of pork mixture. Place in an airtight container and allow to marinate for 2-3 hours (or overnight).

Prepare grill and lay patties on hot grill. If using a food thermometer, make sure internal heat of pork patties is at 145 degrees F. Grill until patties are golden brown with grilled marks.

Serve hot with noodles or rice.

  • 1.5 lbs ground pork
  • 2 tbsp thin soy sauce
  • 2 tbsp oyster sauce
  • ½ tsp black pepper
  • 1 tsp white granulated sugar
  • ¼ cup lemongrass chopped into fine pieces
  • 2 cloves garlic minced
  • 2-3 Thai red peppers optional
