Easy Cauliflower Fried Rice

This simple cauliflower rice looks and taste just like fried rice and is lower in carbs then the traditional fried rice.

This cauliflower fried rice is such a great alternative to takeout fried rice! It’s perfect for those on a low carb diet or just wanting to try something new. I mean cauliflower has really taken off! There’s so much you can do with it these days… like cauliflower pizza, mashed cauliflower, cauliflower everythanggg. Ok, but on a serious note, this cauliflower fried rice is amazing!

I am all about simplicity and easy meals. This recipe calls for premade frozen vegetables and cauliflower rice. This recipe, however, will work if you would like to cut up fresh veggies.

Easy Cauliflower Fried Rice

This simple cauliflower rice looks and taste just like fried rice and is lower in carbs then the traditional fried rice.

Ingredients
  

  • 1 tsp of olive oil
  • ½ sweet onion minced
  • 1 clove of garlic chopped
  • 2 bags of frozen cauliflower rice
  • 2 cups of frozen mix of green peas and carrots
  • 1 tsp of sweet soy sauce
  • 2 tbsp and 1 tsp soy sauce
  • pinch of black pepper

Instructions
 

  • Add olive oil to the wok or frying pan. Add sweet onion. Cook until onion is translucent and soft.
  • Add chopped garlic, frozen cauliflower, and frozen peas and carrots. Note: Do not thaw out frozen vegetables. You may need to break up chunks of cauliflower if the cauliflower is stuck together by banging it against a hard kitchen surface. Mix well for about 1 minute.
  • Add soy sauce, sweet soy sauce, and black pepper. Mix well. Cook for about 10 minutes or until cauliflower is no longer frozen.
  • Create center well for egg (see picture above). Allow the egg to cook and mix the egg with rest of cauliflower. Mix well.
  • Serve hot topped with chopped green onions.
