Easy Fried Brown Rice

If you are looking to make Chinese takeout fried rice but want to use brown rice with the same amazing flavors, then look no further this is the recipe to try! This brown rice fried rice is easy to put together and it is loaded with shrimp, carrots, peas, onions, and flavorful sauces.

This can be made in under 30 minutes and is the perfect dish to serve for lunch or dinner.

If some of you guys have been following my recipes, you will notice I always use vegan shrimp due to a recent shellfish allergy, but this recipe is great with regular shrimp also! This can be made with frozen or fresh shrimp, just be sure to clean the shrimp properly and devein them.

I love eating takeout. Because its quick and easy, however, I like incorporating other ways to make these dishes healthier- like using brown rice.

Why This Recipe Works:

It’s super customizable.

You can choose whatever protein you like- shrimp, chicken, beef, pork, or tofu.

You can add whatever veggies you have in your refrigerator- peas, carrots, cabbage, corn, etc.

Let’s Get Started on How to Make Brown Rice Fried Rice:

Mix all sauce ingredients in a bowl and set aside.

Place cooking oil in hot wok or pan. Add onions and cook until onions become slightly transparent- for about 2 minutes. Then add minced garlic and stir. 

Add shrimp (or vegan shrimp) and stir for 1 minute.

Then add carrots and peas and toss for another minute.

Add 1 tbsp of sauce mixture and stir. Then add brown rice. If rice have lumps in it then lightly break them apart. Mix brown rice well with vegetables and shrimp. Add remaining sauce mixture to rice and stir well.

Create a small area or well on pan (see tips below) and add eggs. Stir the eggs into the rice mixture when eggs are halfway done, this will allow the egg not to get overcooked.

Serve fried rice hot with green onions on top for garnish and enjoy!

Tips:

  • Use day old rice that has been refrigerated.
  • Creating a small well or section on your pan for your eggs ensures the egg can cook completely. Stirring the eggs into the rice mixture when it is halfway done will allow the egg not to get overcooked.

Ingredients
  

  • 1 small sweet onion, chopped
  • 2 garlic cloves minced
  • 10 shrimp or vegan shrimp, cleaned and deveined
  • 1 cup frozen peas and carrots rinsed
  • 2 cups cooked cold brown rice
  • 2 eggs
  • 1 scallion for garnish, chopped

Sauce Mixture

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce can substitute for mushroom sauce to make recipe vegan
  • pinch of black pepper

Instructions
