Yaki Udon

Yaki Udon is an easy Japanese style stir fried noodle recipe that takes about 20 minutes to make.

You can find udon noodles at your local Asian grocery store in the refrigerated or freezer section. Typically, you find these pre-cooked in a vacuum-packed sealed plastic. You will cook your noodles according to the package. I bought my udon noodles from the freezer section and it took 1 minute to cook without thawing the noodles. Make sure to not overcook your noodles because they will be stir fried later with all your veggies and sauce. Be sure to rinse your noodles in cold water after they are done cooking. If you aren’t going to use them immediately drizzling a little bit of oil on them will allow them not to stick together.

This dish is awesome because not only is it delicious, but it is so easy to make.

You can throw in any vegetables or protein you like. My version has no meat in it but adding shrimp, chicken, or whatever meat of your choosing would pair perfectly.

Yaki udon is made using Japanese udon noodles. Udon noodles are thick, chewy noodles.

How to make Yaki Udon:

Sauce: Mix all ingredients for the sauce in a small bowl and set aside.

Cook frozen noodles as directed by packaging. Add frozen noodles directly to pot of boiling water. Avoid overcooking noodles.

Rinse and drain noodles in cold water. If not using right away drizzle some oil on the noodles to prevent them from sticking.

Heat your pan over high heat and add oil. Add vegetables and ¼ of sauce mixture. Stir.

Ingredients
  

  • ½ rice wine
  • 1 tsp mirin
  • 1 tbsp sweet soy
  • 2 tbsp oyster sauce
  • 1 tsp thin soy sauce
  • Pinch of black pepper
  • Sanuki-style udon 2.5 lbs 5 noodle bunches of udon frozen

Vegetables (optional) choose any vegetables you have

  • 2 cups chopped green beans
  • 1 cup julienne sliced carrots
  • 2 chopped green onions

Instructions
 

  • Sauce: Mix all ingredients for the sauce in a small bowl and set aside.
  • Cook frozen noodles as directed by packaging. Add frozen noodles directly to pot of boiling water. Avoid overcooking noodles.
  • Rinse and drain noodles in cold water. If not using right away drizzle some oil on the noodles to prevent them from sticking.
  • Heat your pan over high heat and add oil. Add vegetables and ¼ of sauce mixture. Stir.
  • Add noodles, the rest of the sauce, and green onions.
  • Taste and add more oyster sauce if you prefer a bit salter.
  • Serve immediately.
