Steak Fajitas

These steak fajitas are packed full of flavor especially wrapped around a warm tortilla.

What are fajitas?

Fajitas are a dish that consists of meat and vegetables, typically bell peppers and onions, that you typically find at a Mexican restaurant.

What type of meat to use?

  • Skirt steak
  • Flank steak

You can use other cuts of beef also!

How to make steak fajitas:

First create your marinade– place pineapple juice, soy sauce, lime juice, cilantro, jalapeño, onion, water, black pepper, and cumin in a bowl or large zip lock bag. Add the steak to the bowl or bag. Allow it to marinate for about 4 hours (you can shorten this time if in a rush). I would give it at least 30 minutes in the marinade if you are in a rush to ensure some of the flavors are absorbed in the meat, but for the best results marinating longer will give it the greatest flavor. 

Cook steak in cast iron skillet after finish marinating. Cook until preferred temperature. Remove steak from cast iron skillet. 

For the vegetables– Add 1 tbsp of oil if needed to empty pan. Add onions and bell peppers to the pan and cook until vegetables begin to soften, about 4-5 minutes. Add salt and pepper to taste. 

Cut steak against the grain. Serve hot with your choice of tortilla.

Ways to serve beef fajitas:

  • You can serve them traditionally with flour or corn tortillas.
  • You can go low carb and serve them in lettuce wraps.
  • You can serve them over a bed of rice for a burrito bowl.
  • You can serve them on top of tortilla chips to make nachos.
  • Or since they are so good, you can eat them by themselves!

  • Fresh squeezed lime

Ingredients
  

For Steak

  • 1 lb flank steak
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • 3 limes freshly squeezed
  • ½ cup cilantro chopped
  • 1 jalapeño roughly chopped (seeded for less heat)
  • 1 small onion diced
  • ¼ cup water
  • ½ tsp ground black pepper
  • 1 tsp cumin

For Vegetables

  • 1 small onion cut into strips
  • 1 red bell pepper cut into strips
  • 1 green bell pepper cut into strips

Instructions
 

  • Place pineapple juice, soy sauce, lime juice, cilantro, jalapeño, onion, water, black pepper, and cumin in a bowl or large zip lock bag. Add steak to the bag. Allow it to marinate for about 4 hours (you can shorten this time if in a rush).
  • Place oil in cast iron skillet. Allow skillet to get hot before placing steak on it. Make sure there isn’t too much moisture on the steak. Too much moisture on the steak can decrease the browning of the steak.
  • Cook until preferred temperature. Remove steak from heat.
  • Add 1 tbsp of oil if needed to empty pan. Add onions and bell peppers to the pan and cook until vegetables begin to soften, about 4-5 minutes.Add salt and pepper to taste. 
  • Cut steak against the grain. Serve hot with your choice of tortilla.
