One of my all times favorite ingredients is vermicelli noodles! Why? Because it’s super quick to cook and it’s lower in carbs then a standard pasta dish. This dish is literally my go-to dish when I have to whip something up quick for dinner. I use this in a lot of my dishes and I hope in the future I can share more recipes with this delicious ingredient.

Ingredients
- 1 teaspoon of olive oil
- 1 clove of minced garlic
- 1 teaspoon of minced ginger
- 2-3 chopped mini sweet peppers
- 2 bundles of vermicelli noodle
- 1 teaspoon of soy sauce
- ½ teaspoon of thin soy sauce
- 1 teaspoon sugar
- 1 green scallion chopped
- Pinch of red pepper flakes
Instructions
1. Soak vermicelli noodles for 5 minutes in warm water.
2. Heat oil in pan and add chopped mini bell peppers. Add minced garlic and ginger. Stir. Cook for about 2 minutes.
3. Drain water from vermicelli noodles. Discard water.
4. Add vermicelli noodles to pan. Add sugar, soy sauce, thin soy sauce, and red pepper flakes to taste. Add ½ cup of vegetable broth or chicken broth (water can be used also).
6. Stir fry all ingredients until Vermicelli noodles begin to soften. About 2 minutes. (Noodles will naturally soak up all the liquid)
6. Top noodles with green onions and serve hot.
