Easy Guacamole

This guacamole recipe is simple and fresh containing avocado, tomatoes, scallions, cilantro, and lime juice. Easy and fresh guacamole is delicious with tortilla chips, tacos, or even on top of your burger!

Now I love me some delicious guacamole. The main difference with this recipe verses other recipes you may find is me swapping out the traditional purple or white onion with green scallions. I love onions to flavor my food, but sometimes I feel the onions have an overpowering taste (especially if you are on a hot date- i.e., with my hubby), therefore, I swapped the onions in this recipe. You are more than welcome to use white or purple onion in this recipe, and it will still come out great!

This recipe is best made and served right away. When guacamole is made too far ahead of time it begins to turn brown. Air is the enemy to avocados. If you don’t finish it right away cover it with plastic wrap directly over the surface of the guacamole pushing out all the air. I then use a top of a Tupperware to seal it one more time. It helps with the browning of the avocado, however, not always. It’s best to serve it fresh.

How to make Guacamole:

It’s pretty simple.

  1. Pit avocado and smash using a fork into a bowl.
  2. Add lime juice.
  3. Add diced tomatoes, cilantro, and onion.
  4. Add salt to taste. May add optional jalapeños.

Easy Guacamole

Ingredients
  

  • 3 avocados
  • 1 lime
  • 2 green onions chopped
  • 1/4 cup cilantro chopped
  • ½ cup cherry tomatoes cut in half
  • Salt to taste
  • Optional: jalapenos chopped

Instructions
 

  • Cut open 3 avocados and remove seed. Mash avocado with fork.
  • Squeeze lime juice over avocados.
  • Add chopped green onions, tomatoes, and cilantro.
  • Add salt to taste and mix. Optional: add chopped jalapeno peppers.
  • Serve with your choice of chip. Enjoy!
